Winter Coleslaw Special Recipe

A delicious gabbage starter dish

This is an ideal starter recipe


2 carrots, peeled
1 bulb fennel, trimmed
Extra virgin olive oil
250ml yoghurt
2 tablespoons mustard
Fresh soft herbs (mint, fennel, dill, parsley and chervil), leaves picked and chopped
Sea salt and freshly ground black pepper

Use at least 2 of the following:
3-4 radishes
1 light-colored beetroot, peeled
400g red and white cabbage, outer leaves removed
½ red onion, peeled
1 shallot, peeled
1 lemon
½ a small celeriac, peeled

Recipe Instructions

Prepare the vegetables.
Shred the fennel, carrots and your choice of radishes, beetroot, turnip or celeriac. Put the shredded vegetables into a mixing bowl. Slice the cabbage, onion and shallot very finely and add to the vegetable bowl.

Make the dressing.
In a separate bowl mix half the lemon juice, a glug of extra virgin olive oil, the chopped herbs, yoghurt and mustard.

Pour the dressing over the vegetables and mix well so that all the vegetables are coated. Season to taste with salt and pepper and the remaining lemon juice if you like.
