Sweet and Sour Red Cabbage Soup Recipe

A favorite recipe in Eastern Europe.

Ingredients

1 onion, sliced
3 cups red cabbage, shredded then lightly chopped
2 tablespoons butter
4 cups beef stock
1 tart apple; cored, peeled, and sliced
¼ cup brown sugar
½ cup cider vinegar
¼ teaspoon pepper
½ teaspoon salt
1/3 cup raisins
¼ teaspoon celery seed
¼ cup apple butter


To garnish:
Sour cream
Chopped apple with skin

Recipe Instructions

Cook.
Sauté the apple and onion in the butter until tender. Add the cabbage and sauté for a further 5 minutes. Pour in the stock and vinegar and bring the mixture to the boil. Reduce the heat, stir in the sugar, salt, pepper, celery seed and raisins. Simmer uncovered for an hour. Stir in the apple butter.

Serve.
Ladle the soup into the bowls and top with a spoonful of sour cream. Sprinkle the chopped apple on top.
