Stir Fry Cabbage with Cashew Nuts Recipe

A perfect cabbage dish for vegetarians

Ideal as a vegetarian main course.

Ingredients

225g Savoy cabbage
125g French beans, trimmed
100g cashew nuts
2 garlic cloves, peeled and crushed
1 small red chili
1 large carrot
2 tablespoons sunflower oil

For the sauce:
1 tablespoon lime juice
3 tablespoons water
2 tablespoons light soy sauce
1 tablespoon dry sherry
1.5 cm freshly grated root ginger
Pepper

Recipe Instructions

Make the sauce.
Mix together all the ingredients for the sauce together in a bowl.

Cook the cashews.
Heat the oil and add the cashew nuts and stir fry until golden. Remove them from the pan and drain on a paper towel.

Prepare the vegetables.
Chop and de-seed the chilies. Cut the bean in half. Cut the carrot into batons.

Cook the cabbage.
Heat the oil again and add the garlic, chili and ginger. Stir fry for 30 seconds. Add the beans and cook for 3 minutes. Add the cabbage and carrot and stir fry for 3 minutes. Pour in the sauce and lower the heat. Cook for a few more minutes and then stir in the nuts.
