Spanish Cabbage Soup Recipe

A weight watchers cabbage soup

Ingredients

1 medium cabbage, chopped
2 chopped onions
2 small green peppers, chopped
5 slices whole meal bread, crusts removed and cut into strips
100ml oil
2 tomatoes peeled, seeded and chopped
1 liter hot stock or water
Minced garlic
Paprika
Chopped parsley

Recipe Instructions

Fry.
Fry the strips of bread in the oil until brown and set them to the side. Now add the onion, garlic, tomatoes, peppers and chopped cabbage and fry for a few minutes.

Boil.
Pour the stock over the fried vegetables and bring it to the boil. Reduce the heat, add a pinch of paprika, and allow to simmer for 10 minutes. Add the fried bread and simmer for a further 10 minutes.

Serve.
Serve with a sprinkle of parsley.
