Red Cabbage Soup Recipe

A luscious cabbage soup perfect for the family

Ingredients

½ onion, finely sliced
100g red cabbage
250ml hot chicken stock
1 garlic clove, chopped
1 tablespoon olive oil
½ potato, peeled and chopped
Salt and freshly ground black pepper
Fresh chervil leaves, to garnish

Recipe Instructions

Cook.
Heat the oil in a saucepan and add the onion and garlic. Fry for 2 – 3 minutes until the onion has softened. Add the cabbage and potato and cook for 3 minutes. Add the stock and bring it to the boil. Reduce the heat and let the soup simmer for 8 minutes until the vegetables are tender.

Blend.
Blend all the ingredients together in a blender and season with salt and pepper.

Serve.
Pour into a bowl and garnish with chervil.
