Red Cabbage Coleslaw Recipe

A cabbage coleslaw that is perfect for a homely supper

Ingredients

300g red cabbage
1 red-skinned apple, coarsely grated
1 large carrot, coarsely grated
1 bunch spring onions, thinly sliced
1 tablespoon wine vinegar
2 tablespoon mayonnaise
1 tablespoon extra-virgin olive oil

Recipe Instructions

Prepare the vegetables.
Using a sharp large knife shred the cabbage. Place the cabbage in a large mixing bowl with the carrot, apple and spring onions.

Make the dressing.
Whisk together the mayonnaise, vinegar and oil. Season with salt and pepper and pour over the vegetables. Toss together.
