Red Cabbage and Pear Salad with Honey Recipe

A cabbage salad glazed with honey and pears

225g red cabbage, finely sliced
2 sticks of celery, sliced thinly
3 pears, quartered, cored and sliced
1 red onion, peeled and sliced thinly
80g honey
45ml red wine vinegar
60ml olive oil
60ml cold water
Salt and pepper

Recipe Instructions

Make the salad.
Mix together the cabbage, onion, celery and pears in a large bowl.

Make the dressing.
Place the water and honey into a saucepan and melt the honey over a gently heat. Then bring to the boil without stirring until it turns a deep golden color. Take off the heat and let cool for 5 minutes. Once cooled, add the vinegar and return to the stove and stir until smooth over a low heat. Take off the stove and let cool. Once cooled whisk in the oil and the seasoning.

Pour the dressing over the salad and serve.
