Red Cabbage and Apple Salad Recipe

A simple cabbage salad added with the sweetness of apples

250g red cabbage, finely shredded
1 orange, peeled and segmented
2 spring onions, cut into 5cm lengths and shredded
50g raisins, rinsed
1 dessert apple

For the orange dressing:
Grated rind and juice of 1 small orange
ΒΌ teaspoon dry mustard
60ml sunflower oil
Salt and pepper

Recipe Instructions

Make the dressing.
Place all the dressing ingredients into a large mixing bowl and mix together well.

Prepare the apples.
Cut the apples into quarters and remove the core. Slice the apples into thin slices.

Make the salad.
Add the red cabbage, spring onions and orange. Add the thin apple slices and the raisins. Gently toss all the ingredients together to ensure that everything is coated with the dressing.
