Colcannon Recipe

An irish inspired side dish
Yield: 4 – 6    Preparation Time: 10 minutes    Cooking Time: 20 minutes
Irish cabbage and mashed potato side dish recipe.


3 cups finely shredded cabbage
6 cooked potatoes, mashed
1 onion, finely chopped
¼ cup milk
¼ cup water
¼ cup butter or margarine
Salt and freshly ground pepper to taste

Recipe Instructions

Prepare the cabbage.
Place the cabbage and onion in a saucepan with water and bring it to the boil. Reduce the heat, cover the saucepan and let it simmer for 8 minutes until the cabbage is tender.

Add the potatoes.
Add the mashed potatoes, milk, butter/margarine and salt and pepper. Mix together well and stir continuously until it is heated through.

Serve as a warm side dish.

    Great recipes, but just thought you might like to know about an incorrect spelling at the top of each recipe: ‘yeild’ should be ‘yield’. Hope you don’t mind me mentioning it!
