Chicken with Mustard and Savoy Cabbage Recipe

An appetizing cabbage dish that will sweep you off your feet

2 chicken breasts, boneless & skinless
1 tablespoon Dijon mustard
4 cups Savoy cabbage, washed and finely shredded
½ onion, diced
1 cup chicken stock
1 ½ tablespoons fresh thyme
1 tablespoon olive oil
Salt and pepper

Recipe Instructions

Cook the chicken.
Heat an oven proof skillet to a medium heat. Rub the chicken with olive oil, lots of salt and pepper and half of the fresh thyme. Sear in the skillet until golden brown on both sides, remove and set aside.

Cook the cabbage.
Reduce the heat to medium low and add the onion. Sweat the onion until it is soft and add the cabbage, a pinch of salt and a ¼ of the chicken stock. Cook the cabbage until it is soft adding more stock if it gets dry. Add lots of pepper and mix all together.

Combine the mustard, pepper and the remaining thyme to make a sauce. Brush the mixture over the chicken. Add ¼ of the stock to the cabbage mixture, mix together, and place the chicken pieces on top. Place in the oven and bake for 20 – 30 minutes until the chicken is cooked through.
