Chicken and Shredded Cabbage Leaves Recipe

A salad recipe that can be substituted as a main meal.


2 cups diced leftover chicken
3 cups finely sliced green cabbage
¼ cup thinly sliced green onions
1 cup finely sliced red cabbage
Salt and fresh-ground black pepper

For the dressing:
3/4 cup mayo
2 tablespoon fresh squeezed lemon juice
1 teaspoon grated onion
2 teaspoon celery seeds
1 tablespoon Dijon mustard
1/2m teaspoon salt

Recipe Instructions

Prepare the chicken dressing.
Whisk together all the dressing ingredients in a bowl. In another bowl dice the chicken into bite-sized pieces. Pour ½ of the dressing over the chicken and let the chicken marinate in the dressing while you prepare the cabbage.

Prepare the cabbage.
Slice the cabbage thinly and chop into smaller pieces. Slice the green onions and place the onions and the cabbage into the bowl with the chicken and the dressing. Add the rest of the dressing until the salad is as moist as you would like. Season with salt and pepper.
