Cabbage Potato and Bacon Soup Recipe Recipe

A cabbage soup that will invigorate you senses

A warm and hearty soup.


1 onion
550g floury potatoes, peeled and cut into small cubes
a quarter medium Savoy cabbage (about 200g)
8 rashers streaky bacon
2 garlic cloves
1 Liter chicken or vegetable stock
1 carrot
1 celery stick
1 tablespoon olive oil, plus extra to serve

Recipe Instructions

Prepare the vegetables.
In a food processor, chop up the onion, carrot, celery and garlic. Heat the oil in a large saucepan over a medium heat. Add the vegetables and the potatoes making sure they are well seasoned, reduce the heat and cover the pan. Cook for 5 minutes then add the stock. Turn up the heat and bring the mixture to the boil. Simmer for 5 minutes until the vegetables are tender.

Cook the bacon.
Fry or grill the bacon until it is crispy and cut into strips.

Prepare the cabbage.
Shred the cabbage and discard the core.

To finish.
Blend the soup in a food processor until smooth and return to the pan. Add the cabbage and simmer for a few minutes until the cabbage is tender. Season to taste and serve with the bacon scattered on top.
