Cabbage, Noodle and Prawns Stir Fry Recipe

A recipe that is quick and easy to rustle up.


300g dried medium egg noodles
4 shiitake mushrooms, cleaned and finely sliced
1 small pointed spring cabbage, trimmed and finely shredded
200g cooked and peeled prawns
Half a red chilli, deseeded and finely sliced
3 tablespoons groundnut or vegetable oil
2.5cm knob of ginger, peeled and finely chopped
1 large garlic clove, peeled and finely chopped
1 tablespoon sesame oil
1 red pepper, deseeded and finely sliced
2 tablespoons oyster sauce
1 tablespoon toasted sesame seeds
1 tablespoon rice vinegar
4 tablespoons soy sauce
Handful of coriander leaves
Sea salt and freshly ground black pepper

Recipe Instructions

Cook the noodles.
Bring a pan of water to the boil and cook the noodles for 3 – 4 minutes. Drain and refresh under cold water. Drain again and toss with sesame oil.

Cook the cabbage.
Heat a large wok and add 2 tablespoons of groundnut oil and swirl around to coat the wok. Add the chopped garlic and ginger and fry until lightly coloured around the edges and fragrant. Add the mushrooms, peppers with a pinch of seasoning a fry for a couple of minutes. Add the cabbage and a splash of water and cover the wok. Let the cabbage steam for 2 minutes until just wilted.

Make the sauce.
Stir together the soy sauce, oyster sauce and rice vinegar in a small bowl.

Add the blanched noodles to the pan and add a little more oil if necessary. Stir fry for a minute and then add the sauce. Add the prawns and chilli and stir fry for a couple of minutes until everything is heated through.
