Cabbage and Tomato Soup Recipe

A delicious and healthy cabbage soup
Yield: 20    Preparation Time: 20 minutes    Cooking Time: 3 hours 40 minutes
A hearty soup that is best cooked one day ahead, refrigerated overnight and heated just before serving.

Ingredients

½ medium head cabbage, chopped
1 onion, minced
400g tin chopped tomatoes
4 stalks celery, diced
750ml vegetable stock
450ml chicken stock
4 large carrots, diced
175ml ketchup
350ml tomato juice

Recipe Instructions

Microwave the vegetables.
Microwave the diced carrots for 6 minutes on high in 2 tablespoons of water. Microwave the celery for 4 minutes on high in 2 tablespoons of water.

Cook.
Place the cabbage into a large soup pot. Add the microwaved vegetables and the remaining ingredients. Fill the empty tomato tin with water and add the water to the mixture. Do this twice. Cover the pot and bring it to the boil. Boil for 30 minutes. Reduce the heat and simmer for 2 – 3 hours.

Serve.
Serve with slices of baguette.
