Cabbage and Cannellini Beans Soup Recipe

Ingredients

2 cups shredded cabbage
2 cups canned chopped tomatoes
2 cups drained and rinsed canned cannellini beans
2 cups chopped onions
1 tablespoon tomato paste
5 cups vegetable stock
2 tablespoons olive oil
3 garlic cloves, crushed
Salt and freshly ground black pepper
Parmesan cheese shavings, to scatter

Recipe Instructions

Fry.
Fry the onions and the garlic in the oil for 4 minutes in a saucepan. Add the tomatoes, paste and stock and bring it all to the boil. Reduce the heat and cover. Simmer for 20 minutes.

Blend.
Put ¼ of the beans together with 2 tablespoons of soup into a blender and process until smooth. Stir back into the soup.

Finish.
Return the soup to the simmer and add the remaining beans. Simmer for 5 – 10 minutes until the cabbage is tender. Season to taste with salt and pepper and serve with the Parmesan shavings.
