Braised Red Cabbage

Braised Red Cabbage Recipe

A perfect side dish to fit any meal
Yield: 6    Preparation Time: 15 minutes    Cooking Time: 1 hour 45 minutes

Ingredients

1 large red cabbage, finely sliced
2 large cooking apples; peeled, cored and sliced
2 medium onions, finely sliced
50ml light chicken stock
2 thyme sprigs
3 tablespoons red wine vinegar
3 tablespoons light brown sugar
½ lemon, juiced
30g butter

Recipe Instructions

Preheat the oven to 170C.

Cook.
In a large flameproof casserole dish melt the butter. Cook the onion and apples until softened. Add the cabbage, sugar, vinegar, stock and thyme and bring to a simmer. Cover with a close fitting lid.

Bake.
Place in the oven and cook for 1 hour 45 minutes until tender. Stir once or twice during cooking. Once cooked season to taste and add the lemon juice.
