Braised Cabbage with Salted Pork Recipe

2 cabbages.
1 carrot, sliced.
1 onion, studded with 2 cloves.
½ lb of salt pork, cut into thin slices.
2 cups of consommé.
1 bay leaf.
Pinch of thyme.
1 sprig of parsley.
To serve – cooked garlic sausage

Recipe Instructions

Cook the cabbage.
Cut the cabbages in quarters and remove the hard core. Cook the cabbage in salted boiling water for 15 minutes, drain and allow to stand for 10 minutes in cold water. Drain and remove the thick ribs at the base of the leaves. Squeeze out all the water.

Cook the pork.
Place some of the slices of salt pork on the bottom of a heavy saucepan. Add the sliced carrot, onion, parsley, bay leaf, thyme and cabbage and cover with the remaining slices of pork. Add the consommé. Bring to the boil and cover and simmer for 2 hours.

Serve hot with the cooked garlic sausages.
