Beef and Cabbage Soup Recipe

Yield: 10    Preparation Time: 20 minutes    Cooking Time: 8 hours

Ingredients

450g minced beef
½ large onion, chopped
350g chopped cabbage
400g tinned red kidney beans, drained
4 beef stock cubes
500ml water
2 tablespoons vegetable oil
1 ½ teaspoons ground cumin
700g jar passata
1 teaspoon salt
1 teaspoon pepper

Recipe Instructions

Fry.
Heat the oil in a large saucepan over a medium heat and add the mince and the onion. Cook the beef until it is well browned and crumbled. Drain off the excess fat and transfer the beef into a slow cooker.

Slow cook.
Add the cabbage, kidney beans, water, passata, stock cubes, cumin, salt and pepper into the slow cooker. Stir until the stock cubes dissolve then cover the pot. Cook on high for 4 hours, of on low for 6 – 8 hours. Stir occasionally.
